The Coup-de-Feu gas griddle in cast iron has a size of 39x48 cm with a central ring.
The gas burner has a vertical flame that can easily reach 4.4 kW which allows for a ring adapter to be used, allowing cooking in an Asian-style with Woks type pans. Coup-de-Feu was born to facilitate indirect cooking and is perfect for longer preparation, such as simmering (plaque de mijotage).
It is also used in kitchen where many small pans and pots are used, such as for sauces.
The cast iron plate allows the heat to be spread and therefore limits the risk of making the food "stick" or burn to the pot, compared to the direct flame of an open burner.
The cast iron plate reaches up to 400°C in the center and gradually goes down towards the edges (250°C). By moving the pots around the solid top, it allows you to vary the cooking from simmering to a “gunshot” or “Coup-de-Feu”.
It is possible to check the pilot flame of the burner from the front eyelet on the control panel.
